A personal favorite of the Glengarry brewmaster, Dopplebock was once brewed by monks in the middle ages to be consumed during Lent.  This particular recipe can be traced to Daniel Carey of New Glarus brewing.

Glengarry's first attempt at something dark and mysterious.  A 14 lbs. grain load yeilds 5 gallons of liquid pleasure with Cocoa Powder, 4 Madagascar Vanilla beans, Vanilla extract, and even some coffee to boot.
